It’s that time again when people get together and eat! How about serving or bringing a salad that everyone will love and it’s healthy? Plus, it’s convenient-all of the ingredients can be purchased at your local Trader Joe’s.

Crunchy Broccoli Salad with Grapes and Raisins
2 (12 ounce) packages TJ’s Broccoli Florets or 8 cups broccoli florets
1 ½ cups seedless green grapes, halved
1 cup chopped celery (2 stalks)
1 cup raisins
¼ cup salted sunflower seed kernels
1/3 cup TJ’s Reduced Fat Mayonnaise or light mayonnaise
¼ cup TJ’s Plain Fat Free Yogurt
1 tablespoon agave nectar or 2 tablespoons sugar
1 tablespoon white or cider vinegar
1. Combine the first 5 ingredients in a large bowl.
2. Gently whisk together mayonnaise and remaining ingredients in a small bowl.
3. Pour dressing over broccoli mixture and toss well.
4. Chill for at least 1 hour before serving.
Serves 8
Per serving:
160 calories, 4.3 g fat, .62 mg cholesterol, 10 mg sodium, 30 g carbohydrate, 3.8 g fiber, 5.3 g protein
Options:
Substitute 2 cups cauliflower for 2 cups of the broccoli
Use ½ cup TJ’s Greek Style Yogurt, 0% or other low or non fat Greek style yogurt in place of mayonnaise and yogurt
To lower carbohydrates, use fewer grapes and/or fewer raisins.
*Dairy-Free and Vegan if substitute plain unsweetened soy yogurt for Fat Free Yogurt
