It’s crock pot weather! My healthy crock pot cookbook is available to order.

There are over 120 recipes featuring chicken, beef and vegetarian recipes for entrees and soups. The recipes are all nutritionally analyzed and are lower in calories, fat and sodium than traditional crock pot recipes. Class favorites include Chicken Tortilla Soup, Beef and Butternut Squash Stew and Curried Lentils and Yams.

Substitute for India Relish for Spicy Turkey Pitas (page 53)

Here on the West Coast, the India Relish has been discontinued. It is an ingredient in the Spicy Turkey Pitas on page 53.

Instead of the India Relish, use 1/2 cup of TJ’s bottled (or fresh) bruschetta and add a dash of the following spices:  cayenne pepper, curry powder, ginger and a splash of lemon juice or 1/4 teaspoon of tamarind paste (or to taste). You can also look for a tomato-based chutney in an Indian grocery store that contains the above spices.

Mother’s Day

There are some great brunch, lunch or dinner recipes in “Quick and Healthy Meals from Trader Joe’s” cookbook that Mom and the whole family would love. Curried Chicken Salad with Mango would be perfect for brunch or lunch. The Quick Carrot Ginger Coconut Soup would be great for each as well. Try the Nasi Goreng with Tofu or Chicken and Peanut Vinaigrette or the Seafood Pasta Marinara for lunch.  The Seared Curry Salmon, the Tilapia with Peach Salsa or the Fruity Curried Chicken would be wonderful to serve for dinner. And the recipes couldn’t be easier (or tastier).  The cookbook would make a great gift for Mother’s Day as well. Order early!
